How Does USDA Certify Beef?
The United States Department of Agriculture (USDA) has strict standards to ensure every piece of beef is the same consistent quality. This ensures every customer receives the same quality of beef at any given time.
To receive a stamp of certified Angus Beef producers need to meet the industry’s criteria and beef must meet these specifications:
- Marbling is pyramid/modest
- Marbling texture is fine or medium
- Lean characteristics, Grade “A”
- Ribeye area with 10-16”
- Approx. 1,050 lbs weight
- Fat thickness is less than >1”
- Exceptional muscle density
- Little to no capillary rupture
- No dark cutters
What is USDA Certified Angus Beef?
The difference is in quality. The taste and incredible flavour is key to its marbling and tenderness. The Certified Angus label shows in its grade for beef tenderness, juiciness and flavour. The title is only given to about 7-8% of graded beef. To achieve the highest label, Certified Prime, meat must meet all 10 stringent specifications listed above. Approximately only 1.5%-2% of beef achieve this the highest grade in a year. Certified Angus and Prime are usually reserved and sold to hotels and restaurants.
What is Angus Reserve Beef?
The main difference is the marbling or the small white flecks of fat that runs through the steak. Angus Reserve Beef are fed high protein like barley and corn, which gives the steak superior marbling. Angus Reserve Beef is also aged for approximately 30 days, which gives it a juicy, delicate flavour that many customers crave.
